Olympic Food Challenge no 14 Nauru- Coconut crusted fish


Nauru, is an island country in Micronesia in the South Pacific. Its nearest neighbour is Banaba Island in Kiribati (another one of my challenge countries).

Nauru is the world’s smallest republic, covering just 21 square kilometres (8.1 sq mi). With 9,378 residents, it is the second least-populated country after Vatican City.

For this recipe we went back to our friends at global table adventure.

As Nauru is an island, fish was the obvious choice. The recipe was made with rockfish, a fish native to the Pacific waters however, the best the fish van had was seabass so we had to settle for that.

The fish was then dipped in egg and then rolled in coconut and breadcrumb mix then it was fried in coconut oil.

Not a winner with the OH and I this time, but that might have been because the coconut oil was a bit overwhelming.
